What is the texture and flavour of Cornish Sea Salt?

The brilliantly white, flaky sea salt crystals have been likened by Mark Hix to be more akin to a fleur de sel - some of the most expensive sea salts in the world. Cornish Sea Salt has a wonderful texture that is easy to crumble between the fingers (so no need to shake or grind!) and adds a real flavour intensity to every dish.

 

Can you grind Cornish Sea Salt?

Grinders were initially brought onto the market when rock salt became a common-place household item, the composition of rock salt it a lot harder and therefore must be ground to use on food. Sea salt as a mineral has a soft, slightly damp texture which crumbles easily between the fingers so although it can be ground in certain grinders without clogging it is not entirely necessary and comes down to personal preference.

Is salt bad for you?

Various ‘salt reduction’ and ‘salt awareness’ campaigns targeting food producers and consumers respectively have been very effective on raising the profile of salt. However, this may have left some consumers somewhat confused and an interpretation that ‘salt is bad’ for you. On the contrary, the body needs a certain amount of salt everyday to maintain a healthy life and assist in our general wellbeing. But like many foods, it’s about moderation and balancing quantity with quality. At Cornish Sea Salt Co, we believe that ‘less is more’ – and we know consumers need to use less of our salt in their food, compared to traditional table salts, because the quality and flavour intensity is so exceptional.

 

What makes Cornish Sea Salt stand apart from other sea salts?

Cornish Sea Salt is hand-harvested just eight metres from Grade A classified waters – the highest accreditation to denote water purity. The salt retains over 60 naturally-occurring trace elements essential for well-being. Cornish Sea Salt delivers more taste for less salt that adds real flavour intensity to every dish.

What is the provenance of Cornish Sea Salt?

Cornish Sea has superior provenance, with Cornish salt production dating as far back as the iron-age industry and being vital for the pilchard fishing industry and the local economy. The ability for the fishermen to preserve their catch of pilchards in salt for export meant the difference between being able to command a premium price for export or virtually no price at all if the salt was not available.

Having rejected mined salt from places like Cheshire, arguing it was not strong enough, and insisted on the more intensive and natural flavour of sea salt that could be extracted from the Cornish sea water that surrounded them.

Cornish Sea Salt Co’s founder and managing director, Tony Fraser (below) went exploring around the shores where found fragments of clay pots that the Cornish would have used to boil seawater and make salt. He was inspired by the idea Celts using gorse and hazel fires to heat the pots and make salt. Cornish Sea Salt Co was born and signifies the renaissance of an age-old industry.

What are Cornish Sea Salts eco-credentials?

Cornish Sea Salt is manufactured in an eco-friendly, purpose built harvesting building utilising: laminated timbers; provision for rainwater collection system and marmolium-clad interior walls (crushed natural limestone with inherent antiseptic qualities).

Production uses innovative technology to offer a low energy output to ensure Cornish Sea Salt Co has a benign effect on the marine environment.

Salt content in sea water is 3.5%. The bespoke filtration system and innovative technology extracts just 0.5% with the philosophy of ‘why take more from nature than is needed?’.

Cornish Sea Salt have recently been awarded Soil Association ‘Certificated Product Status’.

The card used in Cornish Sea Salt packaging is sourced from sustainable managed forests and is 100% recyclable.

 

How is Cornish Sea Salt produced?

Fresh sea water pumped in from Grade A accredited waters (the highest to denote water purity); Cornish Sea Salt is then manufactured in an eco-friendly, purpose built harvesting building, being put through a 3 stage filtration process. Following this, using innovative technology to offer a low energy output, the sea water is heated to concentrate the salt. Salt crystals are then hand-harvested and the water is returned to the sea, at ambient temperature, having trickled down a natural fault in the rock face.

Cornish Sea Salt is the only British sea salt company that takes sea water in and returns sea water back to ocean as opposed to distilled water – which, over time, can have an effect on local salinity levels.
